Brie & Heirloom Tomato Toast

Makes 8 toasts | 10 minutes

8 slices of artisan bread 

1 13-ounce wheel of brie 

2–3 large heirloom tomatoes

2 tablespoons olive oil
flaky sea salt to taste

Set oven to broil. Lay sliced bread on a baking sheet. Slice brie into roughly 16 even slices and place 2 slices on each slice of bread. Broil until bread edges turn golden brown and brie is melted and bubbling. This happens very quickly! The bread goes from perfect to burned in a matter of seconds, so pay careful attention. Once the cheese has melted and bread has toasted, remove from the oven. Slice heirloom tomatoes into 4 half-inch-thick rounds, totaling 8 rounds in all. Slice rounds in half, yielding 16 slices of tomato. Place 2 slices of tomato on each toast. Drizzle with olive oil and sprinkle with salt. This is best eaten warm.
