The Deep Sound Cocktail

A twist on a classic dirty martini, with a little added brininess. We used Astraea’s Ocean Gin—since it’s made in the Pacific Northwest with local sugar kelp—and pickled kelp stipes in lieu of the traditional olives. The addition of Ocean Mist, a lightly saline herbal spray, lends that hint of brininess that will transport you right to the tideline.

Ingredients
  

  • ounces Astraea Ocean Gin
  • ¾ ounce dry vermouth
  • ¼ ounce pickled kelp brine
  • 1 –2 spritzes of Ocean Mist (recipe below)
  • Pickled kelp stipes and toasted nori, for garnish

OCEAN MIST

  • 2 ounces hot water
  • 1 square dried nori, 2 x 2 inches
  • 1 tablespoon minced dill or fennel fronds
  • 1 teaspoon sea salt
  • 2 ounces vodka

Instructions
 

  • Chill your glass in the freezer, or add ice to chill for a few minutes.
  • Combine the gin, vermouth and brine in a mixing glass with ice, and stir for 20–30 seconds.
  • Remove the ice from your glass, then strain in the contents of your mixing glass.
  • Spray the drink once or twice with the Ocean Mist.
  • Garnish with a skewer of pickled kelp stipes and toasted nori, and enjoy!

OCEAN MIST

  • In a heat-resistant container, muddle the nori, herbs and salt with the water. Let cool, then strain the infusion into the vodka. Add to an atomizer or spray bottle.
