Quick Mulled Prune Jam | Print |  E-mail

by Jess Thomson

Serves 6 | Start to finish: 35 minutes
Poor prunes. They have such a bad rap. But simmered with wine, orange, and cinnamon, then pureed into a jam, they take on an entirely different role. Smear the jam on toast with a bit of goat cheese, stir it into oatmeal or yogurt for breakfast, drop it into thumbprint cookies, or pair it with a seared chicken breast.

2 cups pitted prunes
1 cinnamon stick
1 clementine orange, halved
1/3 cup sugar
1 1/4 cups cabernet sauvignon

Combine all the ingredients in a small saucepan, squeezing the juice out of the clementine as you drop it in. Bring to a simmer, stirring until the sugar has dissolved, then simmer over low heat for 20 minutes. Let cool for a few minutes, remove the cinnamon stick, and puree in a food processor or blender until very smooth. Store in an airtight container in the fridge.
