Bainbridge Basil Mojito

Makes 1 cocktail
start to finish: five minutes
From Edible Seattle March/April 2011


2 ounces Bainbridge Legacy Organic Vodka
1 ounce fresh organic lemon juice
1 teaspoon organic cane sugar
8 fresh organic basil leaves
3/4 ounce simple syrup*
Sparkling water
1 lemon slice, for garnish

Put the basil leaves and sugar into a tumbler, then add the lemon juice. Muddle well, making sure that all leaves are torn and slightly bruised but not pulverized. Add the vodka and stir gently to dissolve the sugar. Fill the glass with ice and top off with sparkling water. Add organic simple syrup to reach desired sweetness. Garnish with a lemon slice and serve.

*To make your own simple syrup, combine equal parts white sugar and water. Heat the mixture on the stove top or in the microwave just until the water boils. Stir until the sugar is entirely dissolved. Any syrup not used in the cocktail recipe can be stored in the fridge for several weeks.
