Winter Side Dishes

The side dishes are not only the best part of big holiday feasts--they also fill in nicely when we're visiting friends through the winter and need an easily portable dish. Most all of these are vegetarian, and many are gluten-free. It's a toss-up which of these are more addictive: lightly creamy, perfectly seasoned Brussels sprouts? A rich and spicy-sweet vegetable puree the color of a sunset? The heartiest baked beans you could wish for on a cold and windy day? The gratins work nicely as vegetable-heavy main dishes; the caramelized broccoli turns the world's healthiest vegetable into something seriously resembling French fries, and the chickpea salad--served at warm room temperature--will have you turning up your nose at potato salad for the rest of your life.
